This Quinoa and Black Bean Salad is a quick dish that can be thrown together in less than 20 minutes, will hold well for days in the fridge, and packs plenty of plant-based protein and fiber to keep you and your family full for hours.
- 2 cups cooked quinoa
- 3-4 large tomatos chopped
- 1 15oz can black beans
- 1 small red onion chopped
- juice of 1 lime
- 1-2 teaspoons garlic salt (depending on taste)
- 1/2 cup corn
- 1 large avocado, cubed
- 2 tablespoons fresh basil, chopped
Combine all ingredients and let chill for 1 hour.
This dish can be served alone for a meatless meal or it can be combined with grilled chicken or salmon for additional protein.
