Matcha Chia Pudding

Ok, let me be honest, I may be a little late to the chia pudding game but what really matters is I am here now. I've seen enough fancy chia pudding pictures on Pinterest to finally get so curious I had to make my own.

I was not disappointed! The good news is, this is a really healthy food and it tastes great (if you like pudding, if you don't this may be too much for you). Chia seeds are packed full of soluble fiber. This fiber forms a gel-like substance which lines your intestines and makes for super happy gut bacteria.  

*If you have been diagnosed with pre-diabetes or diabetes this food is an excellent staple for controlling your blood sugar.*

For those of you watching your carbohydrate intake, chia pudding makes for a great option, about 83% of the carbs in chia seeds are fiber, which are not digestible carbs.. YAY :)

I got pretty creative with the recipe and used Matcha Green Tea powder to flavor the pudding. I planned on using the pudding as a mid-afternoon snack and I thought the added boost of energy from the Matcha Green Tea would be nice. I also added shredded coconut and blueberries to dress it up a bit and add some additional antioxidants.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk
  • 2 teaspoons maple syrup
  • 2 teaspoons matcha green tea powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons water
  • Optional toppings: shredded coconut and blueberries

Instructions

  1. Combine matcha green tea powder and water to form a paste. This will keep the powder from breaking up in the milk.
  2. Combine matcha paste and almond milk. Whisk until smooth.
  3. Add vanilla and chia seeds and whisk.
  4. Refrigerate overnight until mixture becomes pudding like.
  5. Top with optional toppings and enjoy!
