With the weather finally starting to cool off in Arizona using the oven to bake no longer sounds like a nightmare, and with my husband's recent craving for blueberry muffins I decided there was no better time than the present to whip them up. Now I don't know about you but I love crumble topping on top of muffins but I just can't hang with the massive mess that usually occurs all over the front of my clothes, and with long hair, well you can just imagine what kind of mess that creates. So these muffins come readily equipped with Claudia's version of a cleaner crumb which is far more like a dollop of deliciousness than a crumby mess. These muffins are bursting with blueberry flavor and given the nutmeg and cinnamon in the topping its looking more like fall than summer around here.
You will notice that I replaced some of the sugar with a new product I am trying out called Sugar 2.0 This product is a 1:1 replacement for regular cane sugar and is packaged with fiber to reduce the glycemic index. I have been slowly reducing the amount of sugar in some of my recipes with this product and so far, so good!
