Pumpkin Chocolate Chip Breakfast Muffins
Hello Fall! This is my favorite time of year, but ironically (cue in Alanis Morissette) I happen to live in Arizona. Living in Arizona I can basically forget about the traditional fall weather and scenery if I do not travel to the Northern part of the state. Good thing I make the couple hour drive almost every weekend because I LOVE FALL!!!!! I love living in Arizona but when it's September and I want to start unearthing my scarves, flannels, and boots that have been tucked away all summer.... 100 degree temperatures are just not my jam.
Thank the heavens for fall food! Even if it's hot out I can still pull out everything orange, red, and yellow and create the feeling of fall even when the air conditioner is still working hard to keep us cool.
This weekend I went for it and opened my first can of pumpkin. I had purchased a bunch of rolled oats a couple month back (They have an amazing deal on Bob's Red Mill Rolled Oats on Amazon, and you don't even have to leave the house to get them...bonus!) and I decided to make some Pumpkin Chocolate Chip Breakfast Muffins.
It would be hard for you to tell but I just took a pause from writing this to eat two of these super tasty muffins for breakfast today. It really is like having dessert for breakfast except for the fact that this recipe is low in sugar, and is a good source of fiber, protein, and Vitamin A.
